About “Brown Butter Oatmeal-Raisin Cookies”
I think oatmeal raisin cookies are better than chocolate chip cookies. No exceptions, no caveats. I’ve never understood the disdain reserved for the oatmeal-raisin cookie, so I wanted to develop a recipe that could convince even the most staunch skeptics to see how wonderful these cookies can be.
Occasion
I think this recipe would be well-suited for a bake sale or a potluck, but you can (and should) make these cookies whenever the mood strikes. These cookies freeze well, and the pre-portioned dough can sit in your freezer until you’re in the mood for an oatmeal-raisin cookie.
Elements
My goal wasn’t to reinvent the wheel on what an oatmeal-raisin cookie could be, but rather to try developing what could be the Platonic ideal of the oatmeal-raisin cookie: well-spiced, a chewy interior, and plenty of oats and raisins.
To that end, I limited myself to only using ingredients that you would expect to find in an oatmeal-raisin cookie. I’d say my contribution lies more in the method: blooming the spices and browning the butter makes these cookies incredibly flavorful without using any niche ingredients or complicated technique (browning butter can be slightly tricky, but it’s perfectly doable). Creaming the browned butter and sugar until light and fluffy ensures that the cookie retains its chewiness once baked. While this might not be the most conventional way to make these cookies, the end result is recognizable but better than what you might remember an oatmeal-raisin cookie to be.
