About “Jaggery Chocolate Chip Cookies”

Chocolate chip cookies are largely boring to me. I’ll concede that I’m less forgiving of chocolate-forward desserts (I’m more of a fruit-forward dessert person), but my main issue with the overwhelming majority of chocolate chip cookie recipes out there is that the dough is often nothing more than a forgettable vessel for the chocolate and I often only ever end up tasting chocolate. That’s not a bad thing, but if I’m ever craving the taste of chocolate, no recipe has proved to be worth more effort than popping out to the deli and buying a chocolate bar to satisfy said craving.

This recipe is the product of my search for the ideal chocolate chip cookie: one that’s not cloying, and one where the dough itself harmonizes with the flavor of the chocolate itself. As a dessert person, it’s hard to ignore the love and hysteria around the chocolate chip cookie, so developing this recipe was also an experiment to see if I could fall in love with the chocolate chip cookie (I did).

Occasion

I can’t think of an occasion where a chocolate chip cookie wouldn’t be appropriate, and if you (like me) are often baking for one, the pre-portioned dough freezes well and can chill in the freezer until you’re in the mood for a chocolate chip cookie that’s just come out of the oven. I’m biased, but I think these would also make for a wonderful addition to any bake sale, potluck, or gathering of people where dessert would be welcome.

Elements

I think chocolate chip cookies should be the one thing you can make at a moment’s notice and with ingredients you likely already have in your pantry. I started rummaging through my own pantry for inspiration, but I also imagined myself rifling through the pantry I shared with my mother growing up. She cordoned off a section of the pantry for me so her carefully organized kitchen cupboards would be safe from all of the flours, sugars, and extracts I used for baking.

It was during this process of imagining when I recalled the large chunks of jaggery that would occupy an entire shelf on my mother’s side of the pantry. I wanted to include a toffee-like inclusion in the cookie but without the effort that making toffee from scratch requires, and jaggery was the answer. Because jaggery is straight up unrefined sugar, I thought the warmth of garam masala and the savoriness of rye flour would balance the overall sweetness of the cookie while contributing a complexity to the cookie dough that would distinguish these chocolate chip cookies from every other chocolate chip cookie out there. I happened to have of these ingredients in my pantry already, and I’m aware that these might not be in everyone’s pantry, but these ingredients felt familiar enough to me to include here. The inclusion of these ingredients does not compromise the comfort and familiarity of a chocolate chip cookie (which was important to maintain), but rather I think they distinguish these cookies from every other chocolate chip cookie recipe out there.
